Course description:

The "Mediterranean Diet" has been credited with high life expectancy and low rates of cardiovascular disease of inhabitants of that region, but research to prove its effectiveness is sparse. Dietitians knew it worked, but couldn't necessarily prove it. Now, rigorous, carefully designed research projects confirm the protective and preventive effects of a diet which includes a high intake of olive oil, vegetables, legumes, fruits, nuts, and unrefined cereals; a moderately high intake of fish; a low-to-moderate intake of dairy products; a low intake of meat, poultry, and saturated fats; and a moderate intake of alcohol. This article summarizes and discusses the major studies and their findings, and provides full references for further reading.
